Delicious chicken burgers inspired by Banh Mi flavors, with fresh herbs and a sriracha mayo dressing.
Ingredients
- 1 cup matchstick carrots
- 1 cup matchstick cucumber
- 1/2 cup sliced jalapeno
- 1/2 cup seasoned rice vinegar
- 1/2 cup water
- 1 teaspoon fish sauce
- 1/2 teaspoon salt
- 3 pound ground chicken
- 1/2 cup minced fresh cilantro
- 1/2 cup scallions
- 2 tablespoon sesame oil
- 1 tablespoon salt
- 2 teaspoon grated fresh ginger
- 1 teaspoon fish sauce
- 1 teaspoon black pepper
- 1/4 cup mayonaise
- 2 teaspoon Sriracha
Instructions
- Stir together 1 cup each matchstick carrots and matchstick cucumber, 1 sliced jalapeno, ½ cup seasoned rice vinegar, ½ cup water, 1 tsp fish sauce, and ½ tsp salt in a bowl; set aside.
- On a large rimmed baking sheet, break up 3 lb ground chicken
- Add ½ cup minced fresh cilantro and scallions, 2 Tbsp toasted sesame oil, 1 Tbsp salt, 2 tsp grated fresh ginger, 1 tsp each fish sauce and black pepper and combine.
- Divide meat mixture into 8 even parts
- Roll each part into a ball, and press down gently with the palm of your hand until patty is about 3/4 inch thick.
- Cook to an internal temperature of 160°F
- While burgers are cooking, mix 1/4 cup mayo and 2 teaspons Sriracha to make Sriracha mayo
- Dress each of 8 toasted hamburger buns with Sriracha mayonnaise, ¼ cup carrot mixture, and more cilantro.
