A flavorful dish combining jerk seasoned chicken meatballs with a sweet and spicy pineapple glaze.
Ingredients
- 1 cup pineapple juice
- 1 cup crushed pineapple
- 1 tablespoon white vinegar
- 1 each Scotch bonnet chile
- 1 teaspoon ground allspice
- 1 each egg
- 2 tablespoon jerk marinade
- 3/4 cup packed brown sugar
- 3/4 cup panko
- 1/2 cup heavy cream
- 1/2 cup green onions
- 2 each garlic clove
- 1 pound ground chicken
Instructions
- Combine pineapple juice, crushed pineapple, brown sugar, and vinegar. Bring to a simmer over medium; reduce heat. Uncover, cook until sauce thickens, 25-30 minutes. Remove from heat.
- Adjust oven rack to middle position. Preheat oven to 375°F. Line a baking sheet with parchment paper.
- Mix panko, heavy cream, finely chopped green onions, egg, jerk marinade, and allspice in a large bowl. Add ground chicken; mix gently to combine. Shape into 26 meatballs.
- Place meatballs on prepared baking sheet. Bake until browned and internal temperature reaches 165°F, 15 minutes.
- Add meatballs to pineapple glaze and coat evenly. Serve.
