French Toast with Vanilla-Nutmeg Syrup

This ain't your momma's french toast... add some nutmeg for a special twist.

Ingredients

  • 1 cup pure maple syrup
  • 2 tablespoon vanilla
  • 2 teaspoon freshly grated nutmeg
  • 2 tablespoon unsalted butter, melted
  • 2 cup finely chopped pecans
  • 1/2 cup packed light brown sugar
  • 2 teaspoon ground cinnamon
  • 4 each eggs
  • 2 cup half-and-half
  • 1/2 cup granulated sugar
  • 12 each thick cut bread
  • 3/4 each inch thick

Instructions

  1. For syrup, in a small saucepan combine maple syrup, 1 Tbsp. of the vanilla, and 1 tsp. of the nutmeg. Bring to a simmer over medium. Simmer gently, uncovered, 5 minutes.
  2. Preheat oven to 375°F. Line two baking sheets with parchment paper and brush with the melted butter.
  3. Meanwhile, in a bowl stir together pecans, brown sugar, and cinnamon.
  4. In a pie plate or large shallow dish, lightly beat eggs; whisk in half-and-half, granulated sugar, and the remaining 1 Tbsp. vanilla and 1 tsp. nutmeg until well combined.
  5. Dip each slice of bread into egg mixture, letting it soak (about 5 seconds).
  6. Arrange slices on prepared baking dishes
  7. Sprinkle half of the pecan mixture over top of each slice.
  8. Bake 10 minutes. Remove from stove, flip slices, sprinkle with remaining half pecan mixture
  9. Return to stove and bake another 12 minutes.
  10. Remove from stove and serve with warm syrup
