Make mornings effortless with these freezer-friendly breakfast sandwiches. Fluffy eggs, savory ham, melted cheese, fresh spinach, and herb focaccia come together in a hearty grab-and-go breakfast that's perfect for meal prep. Simply reheat and enjoy a hot, homemade breakfast in minutes.

Ingredients

  • 12 each eggs
  • 1/2 cup half-and-half or milk
  • 5 ounce pkg. baby spinach
  • 6 each Herbed Focaccia (recipe, below right), 20-oz.
  • 6 each ciabatta rolls
  • 6 tablespoon basil pesto or dried tomato pesto
  • 12 slice Gouda or provolone cheese
  • 8 ounce sliced ham

Instructions

  1. Preheat oven to 375°F. Line a 13×9-inch baking pan with foil, taking care to not create holes in the foil. Coat foil with nonstick cooking spray.
  2. In a blender combine eggs, half-and-half, ½ tsp. salt, and ¼ tsp. black pepper; cover and blend until combined.
  3. Add spinach; cover and blend until just chopped.
  4. Pour mixture into prepared pan.
  5. Bake until eggs are just set, 12 to 15 minutes.
  6. Let cool in pan 5 minutes.
  7. Using foil, lift egg mixture from pan and cool completely on a wire rack.
