This Cheesy Rotisserie Chicken Skillet Bake is the perfect busy weeknight dinner, combining tender rotisserie chicken, melty Monterey Jack cheese, creamy salsa, avocado, and cilantro in one easy skillet meal. Ready with simple ingredients and minimal prep, it's a family-friendly dinner that's packed with flavor and makes weeknights feel effortless.

Ingredients

  • 2 tablespoon olive oil
  • 1 each yellow onion
  • 3 clove garlic
  • 1 1/2 teaspoon ground cumin
  • 15 ounce diced tomatoes
  • 1 1/4 cup tomatillo salsa
  • 4 cup shredded rotisserie chicken
  • 1 cup crema or sour cream
  • 6 each corn tortillas
  • 8 ounce shredded Monterey Jack cheese
  • 1 each avocado

Instructions

  1. Preheat broiler to HIGH.
  2. Place oil in a medium-size cast-iron skillet, and heat over medium, swirling to coat.
  3. Add onion, and cook, stirring occasionally, until lightly browned, about 6 minutes.
  4. Add garlic and cumin. Cook, stirring often, until fragrant, 1 to 2 minutes.
  5. Reduce heat to medium-low.
  6. Stir in drained tomatoes and salsa.
  7. Simmer over medium-low, stirring often, until slightly thickened, about 2 minutes.
  8. Remove skillet from heat.
  9. Stir in chicken, crema, tortillas, and ½ cup of the Monterey Jack cheese.
  10. Top evenly with remaining 1½ cups cheese.
  11. Transfer skillet to preheated oven, and broil until cheese is lightly browned, 8 to 10 minutes.
  12. Top with avocado, and sprinkle with cilantro leaves.
  13. Add fresh cilantro leaves to taste.
