These Smoky Molasses Baked Beans are rich, hearty, and slow-baked with crispy bacon, caramelized onions, sweet potato, Dijon mustard, and a touch of molasses for the perfect balance of sweet and smoky flavor. They're the ultimate make-ahead side dish for backyard BBQs, potlucks, cookouts, holidays, or cozy family dinners. Ingredients
- 1 cup grated peeled sweet potato
- 1 each no-salt-added tomato sauce
- 4 teaspoon Dijon mustard
- 2 teaspoon smoked paprika
- 60 ounce no-salt-added navy beans
- 2 cup unsalted chicken stock
- 3 each bacon slices
- 1 1/2 cup sweet onion
- 3 teaspoon kosher salt
- 1/4 cup unsulphured molasses
- 3 tablespoon apple cider vinegar
- 2 tablespoon worchestershire sauce
- 1 tablespoon unsalted butter
Instructions
- Preheat oven to 350°F.
- Place bacon in large ovenproof saucepan or dutch oven
- Cook bacon until fat is rendered and bacon is crisp (about 6 minutes)
- Transfer bacon to a paper towel lined plate
- Add Onion and 1/2 teaspoon salt to pan
- cook over medium low, adding water as needed to prevent sticking, until onion is caramelized
- add sweet potato, increasing heat to medium
- Cook until sweet potato is softened (about 5 minutes)
- Add tomato sauce, mustard, paprika, 2 and 1/2 teaspoons salt
- Cook, stirring frequently till sauce thickens
- Add beans, chicken stock, molasses, vinegar, worcestershire and butter. Stir to combine.
- Cover and bake in the preheated oven, uncovered, for about 35 minutes or until bubbling.
- Crumble bacon and sprinkle over dish
- Let stand 10 minutes before serving
