These Southern Cookout Smash Burger Tacos combine crispy smash burgers with sweet BBQ-style chili, creamy Southern slaw, fresh onions, and tangy yellow mustard inside crispy street corn tortillas. Ready in about 30 minutes, they're the ultimate mash-up of backyard burgers, chili dogs, and tacos that's guaranteed to become your family's newest cookout favorite. Ingredients

  • 3 cup bagged coleslaw mix
  • 4 tablespoon mayonnaise
  • 2 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon white sugar
  • 1 each can chili (Hormel No Beans preferred)
  • 2 tablespoon ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon brown sugar
  • 1 teaspoon Worcestershire sauce
  • 1 pound 80/20 ground chuck
  • 8 each corn tortillas
  • 1 cup onion (finely sliced)

Instructions

To make Slaw:

  1. In a large bowl, combine
  2. 4 tbsp mayonnaise
  3. 2 tbsp apple cider vinegar
  4. 1 tsp Dijon mustard
  5. 1/2 tbsp white sugar
  6. pinch kosher salt
  7. black pepper
  8. One dressing is combine, add 3 cups slaw mix. Stir to combine, and refrigerate


To make Chilli:

  1. In a medium sauce pan, combine
  2. 1 (15 oz) can chili (Hormel No Beans works well)
  3. 2 tbsp ketchup
  4. 1 tbsp yellow mustard
  5. 1 tbsp brown sugar
  6. 1 tsp Worcestershire sauce
  7. ½ tsp smoked paprika
  8. splash hot sauce (optional)
  9. warm for about 10 minutes until thick, sweet, and tangy.


To make burgers:

  1. Divide ground chuck into eight loose balls.
  2. Heat a griddle or cast iron until hot.
  3. Lay out your tortillas on countertop or cutting board
  4. Place a beef ball on each tortilla and smash thin with parchment paper.
  5. Season generously with salt and pepper.
  6. Cook meat side down for 2–3 minutes until crispy, then flip, and cook another minute to crisp tortilla
  7. Top each burger with American cheese.
  8. Assemble tacos by spreading mustard, chili, slaw, onions, then fold and serve immediately.
