These Swedish Peanut Butter & Berry Pancakes give a classic Scandinavian breakfast a delicious twist with creamy peanut butter, fresh banana slices, and juicy macerated strawberries finished with a dusting of powdered sugar. Light, tender, and perfect for weekend brunch or a special family breakfast, they're an easy homemade recipe that feels like something you'd discover in a cozy Swedish café. Every bite is packed with fresh fruit, rich peanut butter, and delicate pancake goodness.

Ingredients

  • 2 cup strawberries
  • 5 tablespoon sugar
  • 1 1/2 cup all-purpose flour
  • 3 each eggs
  • 2 1/2 cup milk
  • 1 teaspoon vanilla
  • 1/2 cup peanut butter
  • 4 each banana

Instructions

  1. Combine strawberries and 1 to 2 Tbsp sugar in a medium bowl and let sit for 30 minutes.
  2. In a separate medium bowl, mix flour, 3 Tbsp sugar, and 1/2 tsp salt. Beat eggs with milk and vanilla, then add to the flour mixture and beat until smooth.
  3. Lightly coat a 10-inch nonstick skillet with butter and heat over medium-high.
  4. Pour about 1/3 cup batter for each pancake, cook until golden on the underside, then flip and cook for another 30 seconds.
  5. Repeat with remaining batter to make 16 pancakes.
  6. Spread about 1 Tbsp peanut butter on half of each pancake, fold in half, add sliced bananas and fold again, add strawberries, and dust with powdered sugar.
