This Roasted Garlic Caprese Bruschetta layers crispy toasted baguette with sweet roasted garlic, creamy fresh mozzarella, juicy vine-ripened tomatoes, fragrant basil, and a rich balsamic glaze for the ultimate Italian appetizer. Ingredients
- 1 each Baguette
- 8 ounce fresh mozzarella
- 7 each Roma tomatoes
- 1 each whole garlic bulb
- 1/4 cup shredded basil leaves
- 1/4 cup balsamic glaze
- 1/4 cup olive oil
Instructions
Roast Garlic
- slice off the top 1/4 inch of a garlic bulb to expose the cloves
- drizzle with 1 teaspoon of olive oil
- wrap tightly in aluminum foil or place in a covered small baking dish
- and bake at 400°F for 40 to 45 minutes
- Once garlic is roasted, set it to cool.
- Once cooled, squeeze all roasted garlic into a bowl and smash with back of a spoon to create paste
Make the toast
- Slice baguette into approximately 1" thick slices.
- Brush bread slices with olive oil and toast in oven until golden and crisp.
- Spread roast garlic on each piece.
- Layer fresh mozzarella slices on top of the warm bread.
- Arrange sliced tomatoes over the cheese.
- Scatter fresh basil leaves on top.
- Drizzle with olive oil and balsamic glaze
- sprinkle with salt and pepper
- Serve and enjoy
