Ingredients

  • 1/2 cup yellow onion (coarsely chopped)
  • 1 pound button or cremini mushrooms
  • 2 clove garlic
  • 8 ounce ground beef (85%-90% lean)
  • 1 each egg
  • 1/4 cup panko
  • 4 slice swish
  • 6 tablespoon coarse ground mustard
  • 1 tablespoon cider vinegar
  • 2 teaspoon honey
  • 8 each kings hawaiin slider buns
  • 1 cup arugula

Instructions

  1. In a food processor combine onion, mushrooms, and garlic; pulse until finely chopped.
  2. In a 10-inch skillet heat 2 Tbsp olive oil over medium-high.
  3. Add mushroom mixture and cook, stirring frequently, until mushrooms have given off their liquid and mixture is dry and beginning to brown, 8 to 10 minutes.
  4. Remove from heat and transfer to a large bowl. Let cool 5 minutes.
  5. Add ground beef, egg, panko, ¼ tsp salt, and ½ tsp black pepper to the mushroom mixture; mix gently to combine.
  6. Divide mixture into eight portions (about ⅓ cup each); shape each into a ½-inch-thick patty.
  7. Form a shallow indent in the center of each patty.
  8. Transfer patties to a generously oiled grill rack over medium.
  9. Grill, covered, 4 minutes.
  10. Turn burgers.
  11. Grill, covered, 3 minutes
  12. Cover with swiss cheese and cook an addition 1 minute or until 160 degrees internal temp
  13. In a small bowl combine mustard, vinegar, and honey to make dressing
  14. layer rolls with Arugula, dressing, and burgers
  15. serve
