Ingredients

  • 1 1/2 pound chicken breast or thighs
  • 2 tablespoon olive oil
  • 3 pound fresh broccoli
  • 2 teaspoon sesame seeds, optional garnish
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoon garlic, grated
  • 1/2 cup hot water
  • 6 tablespoon low sodium soy sauce
  • 2 tablespoon packed light brown sugar
  • 1 1/2 tablespoon corn starch
  • 1/4 teaspoon black pepper
  • 2 tablespoon sesame oil
  • 8.90 ounce 90 second rice

Instructions

  1. Start by preparing your ingredients: cut chicken into thin strips and broccoli into bite-sized pieces.
  2. In a small bowl, combine hot water and corn starch to make a slurry.
  3. In a separate bowl, mix soy sauce, sesame oil, ginger, garlic, black pepper, and brown sugar. Stir well until the sugar dissolves. Add the corn starch slurry to this mixture and set aside.
  4. Heat a large skillet or wok over medium heat. Add 1 tablespoon of oil.
  5. Add the broccoli to the skillet and sauté for 4-5 minutes, partially covered, until bright green and crisp-tender. Remove from the pan.
  6. In the same skillet, add another tablespoon of oil. Add the chicken in a single layer and cook for about 2 minutes per side, until cooked through.
  7. Pour the sauce into the skillet with chicken. Reduce heat to medium-low and simmer for 3-4 minutes until the sauce thickens.
  8. Add the cooked broccoli back into the skillet and stir to combine. If desired, add 1-2 tablespoons of water to thin the sauce.
  9. Serve the stir-fry over cooked rice and garnish with sesame seeds if using.
