Ingredients

  • 2 pound chicken thighs
  • 1/2 cup corn starch
  • 1/4 cup extra light olive oil
  • 2 tablespoon minced ginger
  • 3 clove garlic
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon sesame seeds
  • 1/2 cup cold water
  • 5 tablespoon low sodium soy sauce
  • 3 tablespoon rice vinegar
  • 1 1/2 tablespoon hoisin sauce
  • 3 tablespoon granulated sugar
  • 1 1/2 tablespoon corn starch
  • 2 tablespoon sesame seeds
  • 1 teaspoon sesame oil
  • 17 3/5 ounce 90 Second Jasmine Rice

Instructions

To make the sauce, combine:

  1. 1/2 cup cold water
  2. 5 tbsp low sodium soy sauce
  3. 3 tbsp rice vinegar, or more to taste
  4. 1 1/2 tbsp hoisin sauce
  5. 4 tbsp granulated sugar
  6. 1 1/2 tbsp corn starch
  7. 1 teaspoon sesame oil


Cook

  1. Cut chicken into 1-inch cubes. Toss chicken in batches with cornstarch, tapping off the excess.
  2. Preheat a skillet with 1 tbsp oil.
  3. Cook chicken in 2 to 3 batches, sautéing until golden on both sides and cooked through, adding more oil as needed, then remove from the pan and set aside.
  4. Add garlic, ginger, and red pepper flakes to the skillet, sauté for about 30 seconds or until fragrant.
  5. Add the sauce to the skillet and bring to a simmer while stirring. Let simmer for 1 minute to cook off the vinegar.
  6. Taste the sauce and adjust soy sauce or rice vinegar as desired.
  7. Add the chicken back to the skillet and toss to coat. Serve over rice, garnished with sesame seeds.
