Tender sweet potato pan-seared in garlic, rosemary, thyme, and butter until the cut side develops a rich, golden crust. Crispy and buttery on the outside, soft and sweet inside—an easy side that tastes way fancier than the effort it takes.

Ingredients

  • 2 tablespoon butter
  • 1 clove garlic, chopped
  • 2 sprig thyme
  • 2 sprig rosemary
  • 1 each sweet potatoe

Instructions

  1. Rinse the sweet potatoe and microwave for about 5 minutes until soft.
  2. Warm a non-stick pan to medium-low heat.
  3. Add 2 tablespoons butter to the pan.
  4. Add chopped garlic, thyme sprigs, and rosemary sprigs into the butter to infuse flavor, cooking for about 1 minute.
  5. Split the sweet potatoe in half lengthwise.
  6. Place the flesh side of the sweet potato down into the butter in the pan, pressing gently.
  7. Cook until a golden crust forms, about 2-3 minutes, basting with butter and herbs.
  8. Remove from heat, plate the sweet potato flesh side up.
  9. Sprinkle with salt to taste and spoon some of the butter over the sweet potato.
  10. Add salt to taste to taste.
