The kind of baked mac and cheese you remember from church suppers and crowded fellowship-hall tables. Tender macaroni is folded into a rich, creamy sharp Cheddar sauce with mustard, thyme, and a touch of Old Bay, then baked under a golden layer of melted cheese. Comfort food made for big scoops, second helpings, and an empty casserole dish by the end of the evening.

Ingredients

  • 4 cup dried macaroni
  • 1 each egg
  • 4 tablespoon butter
  • 1/4 cup all-purpose flour
  • 2 1/2 cup whole milk
  • 2 teaspoon dry mustard
  • 1 pound sharp Cheddar, grated
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon old bay

Instructions

  1. Preheat oven to 350°F.
  2. Cook macaroni until slightly firm, drain and set aside.
  3. Beat the egg in a small bowl.
  4. In a large pot, melt butter and add flour. Whisk over medium-low heat for a few minutes.
  5. Pour in milk and add dry mustard, whisk until smooth. Cook until very thick, about 5 minutes.
  6. Reduce heat to low.
  7. Very slowly pour 1/4 cup of sauce into beaten egg, whisking constantly.
  8. Combine egg mixture back into sauce, whisking continuously.
  9. Add grated cheese and stir until melted.
  10. Mix in salt, old bay, pepper, and thyme. Taste and add more salt and / or old bay as needed.
  11. Add cooked macaroni, stir to combine.
  12. Pour into a buttered baking dish, top with extra cheese.
  13. Bake 20-25 minutes until bubbly and golden.
