An easy, protein-packed shrimp pasta loaded with broccoli, juicy tomatoes, and artichoke hearts, tossed in a light and creamy garlic-herb Boursin sauce. Big flavor, plenty of veggies, and an easy weeknight dinner that comes together fast. Perfect when you want something fresh and satisfying without spending all night in the kitchen.
Ingredients
- 1/2 package Barilla protein pasta
- 6 each Campari tomatoes
- 1 pound broccoli
- 15 ounce can artichoke hearts
- 2 pound frozen peeled and deveined shrimp
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 2 teaspoon Old Bay
- 1 tablespoon Boursin herb and garlic
- 1/2 tablespoon butter
- 3 tablespoon olive oil
Instructions
- Run shrimp under cold water to quick thaw, about 10 minutes.
- Boil water in a large pot for pasta.
- Chop broccoli into small florets, quartering large florets.
- Quarter the campari tomatoes.
- Heat a large pan over medium-high heat.
- Remove tails from shrimp, pat dry, and toss with garlic powder, onion powder, and Old Bay.
- Add 2 tablespoons of olive oil to the pan, then sauté shrimp until cooked through. Set aside.
- Reduce heat to medium
- Cook pasta in boiling water until al dente, about 8 minutes.
- Meanwhile, in the same pan used to cook shrimp, add 1 tablespoon olive oil, then toss in broccoli, stirring to coat.
- Add 2 tablespoons water, cover, and steam broccoli for about 4 minutes.
- Remove cover, add more oil if needed, then add tomatoes cut side down; cook for about 2 minutes.
- Add artichoke hearts, cook for another 2 minutes.
- Turn off heat on pan with vegetables.
- Reserve 2 tablespoons pasta water, then drain pasta and return to pot.
- Add 1/2 tablespoon butter, reserved pasta water, and Boursin to the pasta.
- Stir vigorously until butter and Boursin melt and coat the pasta.
- Season with salt and pepper to taste.
- To serve, layer pasta, vegetables, and shrimp on plates.
